sweet stuffs

A LCHF chocolate muffin that is really good. We all need something “sweet” from time to time.

Ingredients:
50 g butter (ecological if you can)
50 g 70% chocolate (ecological if you can)
3 eggs (fresh and preferably ecological)
50 g (1 ml) hazelnuts (ecological if you can)

Do like this:
Chop the hazelnuts.
Whisk the egg yolks cellular and long.
Melt the chocolate with the butter (in microwave- melt the chocolate easily so that it does not burn itself, but not completely melted and stir it last. You can also run on thawing).

Beat the egg whites well and hard, until you can turn the dish over.

Mix egg yolks, hazelnuts with chocolate and butter mixture.

Then turn down the egg whites gently into the mixture.

Pour the batter into muffins / bun baking tin with a spoon.

Bake 20-25 minutes at 150 degrees.

Delicious! Clearly better than what I thought when I first tried them. Tastes good, near real chocolate muffins. In any case, it is good when you have not eaten muffins in over a month! A great substitute to other sweets full of carbs.

Please be sure to look at the rest of my recepies too, and you can also read my articles on the LCHFdiet to learn more. It is always good to know what you are doing, and why. There is some history and “good to know” stuff. I have learned most from reading Dr. Dahlquist texts and books. I think that her books are only availeble in swedish yet. But I have also found some litterature in english, that I refer to in the fact texts.
